I recently got back from a trip to Barcelona, and was sad to leave the city's gazpacho behind. If you haven't had gazpacho, imagine a cold, tomato salsa-like soup, and you're very much on the right track. Luckily, a friend gave me a Barcelona cookbook before my trip, and a week or so ago, I was able to make fresh gazpacho, using tomatoes straight from my garden. If you're a gardener, and have tomatoes ripening on the vine that you don't know what to do with, I can think of no better use for them than gazpacho. It's a simple soup, consisting on nothing more than tomatoes, bell peppers, cucumbers, sherry vinegar, and day old bread. With these ingredients, fresher is better (except for the bread!) as you really get a great taste for the vegetables you're using.
There are tons of different recipes online ( I GOOGLED "gazpacho recipe" and got a lot of responses) If you want the specifics of the one I made, let me know. I'll be happy to forward a recipe on.

Here is the basic recipe for gazpacho. I followed a recipe from a Williams Sonoma cookbook, but looking at this one, it is basically the same. I would reccomend sherry vinegar, in the same quantity shown here.
